SPICY BLACK BEAN DIP RECIPE
Ingredients:
– 1 15 oz can of black beans, rinsed and drained
– 1/2 cup fresh cilantro, roughly chopped
– 1/4 cup red onion, chopped –
1/4 cup shredded carrots –
3/4 cup fresh pico de gallo or chunky salsa
– 1 tbsp fresh lime juice
– 1 tbsp fresh jalapenos, de-seeded and roughly chopped
– 1/2 cup plain, fat-free yogurt –
1 tsp ground cumin
–1/2 tsp paprika
– 1/2 tsp salt
– 1/4 tsp black pepper
Directions:
Blend all ingredients in a blender or food processor blend until chunky or smooth (depending on which consistency you prefer) Spoon into a serving bowl and garnish with cilantro. Entire Recipe makes 8 servings Serving size is 1/4 cup Each serving = 1 Point Total recipe adapted from:laloosh.com
