These Cinnamon and Sugar Muffins really taste like donuts. An easy recipe, I love making them as mini cinnamon and sugar muffins.

1 3/4 cup all-purpose flour 300 g
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp vanilla extract
1/3 cup oil 80 ml
3/4 cup sugar 165 g
3/4 cup milk 185 ml
1/4 cup butter 60 g
1/3 cup sugar 70 g
1 tbsp cinnamon
These Cinnamon and Sugar Muffins really taste like doughnuts. An easy recipe, I love making them as mini cinnamon and sugar muffins.
Lightly grease a muffin tin and dust with flour.
In a bowl, mix flour, baking powder, salt, nutmeg and cinnamon until combined.
In a separate bowl, mix together oil, sugar, egg, vanilla extract and milk.
Add dry ingredients to the wet ingredients and fold the ingredients together, but be careful not to over-work the mixture, stir only to combine. It doesn’t matter if there are a few lumps in there.
Bake in the centre of the oven at 350°F/175°C for 15-20 minutes, or until the muffins are well risen and a skewer inserted in the centre comes out clean..
Meanwhile, melt the butter in a bowl. Combine the sugar with the cinnamon in another bowl.
Shake muffins out while still hot. Dip muffins in butter, coating thoroughly, then into the sugar/cinnamon mix. Let cool.
