INGREDIENTS
4 oz. Cream cheese softened
1 Box Sugar free Lemon Jello
Juice from ½ of a large lemon
Zest from 1 large lemon
1 C. Hot water
2 C. Fat free whipped topping
1 tsp. Vanilla extract
Reduced fat graham cracker pie crust
INSTRUCTIONS
In a small mixing bowl, whisk together the hot water and the lemon Jello until it is completely dissolved.
In a separate mixing bowl, combine the cream cheese, whipped topping, lemon juice and vanilla. Beat the ingredients until just blended.
Fold the Jello mixture into the whipped topping mixture gently by hand until completely combined.
Add the zest to the mixture, and pour it into a prepared graham cracker pie crust.
Place the pie into the fridge to chill until it is set before serving.
